  • 4 ½ lb. Raider Red Filet Mignon Steaks
  • 4 oozes. creamy Brie spread, we like Alouette brand
  • Onion rings, for topping
  • Date Night Doins Date Night Heat, to taste
  • Date Night Doins Gourmet Steak Seasoning, to taste Ken’s Special Steak Sauce
  • 1 cup mayonnaise
  • 1 Tablespoon our “Smoked Garlic Sauce”
  • 1 Tablespoon Briggs True Spicy Bourbon Bacon BBQ Sauce
  • 2 teaspoons fresh black pepper
  • Onion rings, optional
  • Rolls of choice

  • 4 tubes Pillsbury pizza crust
  • 1lb. Raider Red ground pork, cooked and drained
  • 1lb. ground beef, cooked and drained

Uncle Bubba’s Texas Terror Chili

A Wood Pellet Grill Recipe

Prep Time: 30 minutes

Cook Time: 6 hours total including smoking the meat

Grill: Green Mountain Wood Pellet Grill

Pellets: Green Mountain’s Texas Blend BBQ Pellet

Ingredients: Uncle Bubba’s Texas Terror Chili

  • 8 pounds of smoked beef, we used tri-tip
  • 4 cups brewed coffee
  • 2 large sweet onions, rough chopped
  • 1 cup semi-sweet chocolate chunks
  • ½ cup chipotle chili powder
  • ½ cup smoked garlic
  • ¼ cup Briggs True Texas Chili Powder
  • ¼ cup ground cumin
  • ¼ cup butchers grind black pepper
  • ¼ Masa, mixed with a little coffee
  • 1 28oz can tomato sauce
  • 3 Tbsp. tomato paste
  • 2 Tbsp. smoked Paprika
  • 2 Tbsp. Oregano
  • 2 Tbsp. dry Beef bouillon
  • 1 Tbsp. sea salt
  • 3 bay leaves
  • 3 dried Chipotle and Ancho peppers (Soaked in water overnight.)
  • Duck Fat (our store)
